Topings:
Lettuce
Tomatoes
Cheese
Sour Cream
Other Ingredients:
Refried Beans
Tortillas
Ground Beef
For the Meat preparation:
Chili Powder
Cumin
Chipotle powder (optional)
Diced onions
Garlic clove
Directions:
Start with about a pound of Ground beef. Dice about 2 tablespoons of onions. Add two to three tablespoons of Chili powder, a teaspoon of Cumin, and about a teaspoon of Chipotle (optional, but adds a delicious smokiness and extra spiciness). Cook it all together until the meat is browned (extra fat can be drained). Lastly, add the crushed garlic and cook for another minute or two.
Heat the tortillas and the beans. Have the toppings chopped and ready to go.
Very easy and very tasty.
Ohhhh...I miss Friday Fiestas!! Maybe when Abby and I come out I could con you into making either chicken enchiladas or mexican lasagna or both :)
